SIDE DISH | The Easiest Red Potato Recipe Ever

I share a lot of main dishes on this blog… most of my recipes don’t include anything about SIDES. I’ve been really trying to get better at including more healthy sides with my meals. I have no idea why, but for some reason, I just have the hardest time thinking of what to serve WITH the main dishes that I cook. Am I the only one that has this problem?
I got a bag of small red potatoes from the grocery store last week on MAJOR sale and wanted to serve them up with the pork tenderloin I was making for dinner.
So, I threw a few ingredients together and BAM, these came out. They were SO easy (literally. so. easy.) and SO delicious.

SIDE DISH | The Easiest Red Potato Recipe Ever
Ingredients:
- One small bag of red potatoes
- Olive oil
- Herbs de Provence
- Mrs. Dash Onion and Herb blend (no salt added!)
Directions:
Preheat your oven to 400 degrees. Be sure to wash and scrub the potatoes really well. Then, cut the potatoes into quarters.
In a large bowl, coat the potatoes with olive oil. Then, toss in your Herbs de Provence and Mrs. Dash Onion and Herb blend. I didn’t measure, but I added about equal parts of both. Toss the potatoes in the olive oil and herb mixture and be sure they are coated evenly. On a baking sheet lined with aluminum foil, spread out your coated potatoes skin side down.
Bake in the oven for about 25-30 minutes or until they are beginning to brown.
Enjoy! Best served as a side with steak or pork… but could really be good with anything.
