Super Easy Grilled Vegetables Recipe
This easy and delicious grilled vegetables recipe makes a great side dish year round. It is also a great way to use up any vegetables you have on hand and don’t want to waste!
Have you ever had a bunch of random vegetables on hand that are about to go bad or maybe you aren’t sure how to use and you don’t want to waste them? Sometimes I feel like I get in a rut with vegetables and don’t know what to do with them… or I get bored and feel like I am always eating them the same way. Well, last week we decided to fire up the grill and I whipped up this grilled vegetables recipe. It was so easy and so delicious and it was the perfect side dish for our steak! It would be so easy to customize with whatever vegetables you have on hand!

Easy Grilled Vegetables Recipe
This is a super easy recipe for those vegetables you have on hand that you want to use up before they go bad or if you are looking for a delicious and healthy side dish... This grilled vegetable medley is a huge hit!
Ingredients
- 1 Large Tomato (cut into 1/2 inch pieces)
- 1/2 Cucumber (cut into 1/2 inch pieces)
- 1 Zucchini (cut into 1/2 inch pieces)
- 1 Yellow Squash (cut into 1/2 inch pieces)
- 2 cloves Minced Garlic
- 1-2 tbsp Olive Oil
- to taste Salt
- to taste Pepper
- to taste Trader Joe's Everything But the Bagel Seasoning (optional, but worth it!)
Instructions

Simply combine all the ingredients in a large bowl and mix to make sure it's evenly coated

Take a large piece of tinfoil (approximately 10"x18") and fold up the edges. Coat with cooking spray evenly. Spread vegetable medley onto the tinfoil evenly...

Place tinfoil on the grill for about 10-15 minutes (or until vegetables are cooked thoroughly... don't OVER cook them and make them squishy). Make sure to stir vegetables regularly to ensure they grill / cook evenly.
