RECIPE | Ridiculously Easy Chili Pizza
I’ve been working very hard at trying to make the most efficient use of our leftovers in our fridge. I hate when food goes to waste. I also have a tendency to make too much of something so then we end up eating the leftovers of that something for like a week and we can tend to get sick of it.
Well, I made some chili in the crockpot earlier this week and I ended up making a TON of it. And while I LOVE chili and I love chili leftovers, I wanted to come up with a couple ways to remix the leftovers we had on hand.
So, the idea for chili PIZZA suddenly popped in my mind… so I gave it a try and it ended up being SO DELICIOUS. AND SO EASY. My husband and I ate the whole thing!
This recipe is SO easy, I almost feel silly sharing it… but alas, I will anyway. This is one of those meals where you can plan out a couple meals in a week and really make use of what you have. Chili one night. Chili pizza another night. Chili TACOS another night. Etc. etc.
Okay, enough rambling, onto the recipe.
RECIPE | Ridiculously Easy Chili Pizza
INGREDIENTS FOR THE CHILI (you DO NOT have to use this chili recipe… ANY leftover chili that you have will do)
- 1 pound of boneless skinless chicken breasts
- 1 can of black beans
- 1 can of red kidney beans
- 1 can of chili ready diced tomatoes
- 1 can of petite diced tomatoes
- 1 can of green chilies
- 1 package of taco seasoning
- 1/2 a package of frozen corn (or 1 can of corn)
- 1 clove minced garlic
DIRECTIONS FOR THE CHILI
Place all the ingredients in a crock pot, and cook on medium for about 4-6 hours. If you need less time, you can cook it on high.
Remove the chicken, shred the chicken, then put it back in the crock pot. Stir it all together. Serve!
INGREDIENTS FOR THE CHILI PIZZA
- 1 pizza crust (I used the Archer Farms whole wheat square thin pizza crust from Target)
- Leftover chili
- Shredded cheese (I used the Mexican blend)
DIRECTIONS FOR THE CHILI PIZZA
Preheat oven to 400 degrees.
Place pizza crust on a cookie sheet or pizza stone. Top pizza crust with cold, leftover chili. Top with cheese.
Bake in the oven for about 11-14 minutes or until the crust is brown and toppings are hot.
Serve with a dollop of sour cream! Enjoy!

That looks good! I am a notorious over-cooker and I hate throwing out the leftover also. Cooking for one is hard though!
I need to make too much chili just to try this!
