RECIPE | A Cole Slaw Recipe for Those Who Don’t Like Cole Slaw
Confession: I very much dislike cole slaw. Yet, this recipe is for cole slaw.
That I actually LOVE. Let me explain this to you…
A few months ago, my family and I started participating in a CSA. CSA stands for community supported agriculture. The kind we signed up for is one where, each week, we get fresh from the farm produce, meat, and eggs delivered to our house.
While we get to pick the meat that we get, we don’t get to pick the produce. I have actually LOVED this because it’s introduced our family to new fruits and veggies that we might not have cooked with before. AND, it’s forced me to take veggies that I normally don’t like and find a way to make them in a way I DO like.
Well, a few weeks ago, I got yet another head of cabbage and another batch of radishes and I was set out on a mission…
My husband loves cole slaw. I don’t like cole slaw. YET, I wanted to find a way to make a Carolina-style slaw that I DO like. So, I played around in the kitchen, got out some ingredients, and THIS recipe was born. And it’s DELICIOUS!
So, if you’re not a cole slaw fan like me, give this recipe a try. You might surprise yourself!
North Carolina-Style Cabbage & Radish Vinegar Based Cole Slaw
RECIPE | North Carolina-Style Cabbage, Radish, & Onion Vinegar Based Cole Slaw
Ingredients
- 1 small head of green cabbage
- 1 onion OR 4-5 small white onions
- 1 small batch of red radishes I used about 4-6 smallish radishes
- 1/2 cup apple cider vinegar
- 1/2 cup distilled white vinegar
- 1 tablespoon sugar
- 1 tablespoon crushed red pepper adjust according to how spicy you want it
- 1 teaspoon salt
- 3/4 teaspoon black pepper
- Dash of hot sauce OPTIONAL
Instructions

Start by cutting up the head of cabbage (remove the core) and place in a food processor. Chop until the cabbage is cut up small. You MAY need to work in batches depending upon the size of your food processor.

Do the same thing with the onions and the radishes.

Once the cabbage, radishes, and onions are chopped up real small, place in a large mixing bowl.

Then add in both vinegars, sugar, red pepper, salt, and black pepper.

Give it a BIG stir. Make sure it's mixed really good.

Then give it a taste. If it's too bitter, add another teaspoon of sugar. If it's too sweet, add a little more of both vinegars and salt and pepper, This process is a little bit of "trial and error."

Let sit in the fridge for at least 20 minutes... the longer it sits, the spicier it will get. This recipe is SPICY.

I love coleslaw, and this looks delicious! I may omit the radishes though… I’m not a huge radish fan.
This looks like a great recipe! I am one of the people that dislike coleslaw. I think it is a texture thing for me or the overly cabbagey smell.

The thought of coleslaw gives me the heebie jeebies! I know I won’t like this a I hate anything vinegary but I bet Dave will so I may give it a go, just for him, cos I’m nice sometimes!
