52 in 52: Hillsborough BBQ Company [ @HillsboroughBBQ ]
You guys, I can’t believe I forgot to mention this yesterday. Remember how I talked about the awesome little things? Well I left out, quite possibly, the AWESOMEST OF LITTLE / HUGE things!
I got THIS in my e-mail yesterday:
YESSSSSSSSSS. May 23rd. DMB. In concert. If you’re not a DMB fan, that’s totally fine. But I can’t even BEGIN to tell you how excited I am to see them. It’s been FOREVS. Last time I saw them was back in November 2010 in Charlottesville before they went on their break. TOO LONG.
Okay. Moving on to other things.
Can you believe that Husband and I have been married two months. WHAT? AND in that whole two months (of living in Hillsborough, no less) we had never been to Hillsborough BBQ Company. I mean, really, a BBQ company, IN HILLSBOROUGH, where we had not yet dined.
So, needless to say, we knew that we had to add it to 52 in 52. Now, in our defense, we did try to go eat there one time on a weekend but the wait was FOR-EV-ER and I’m sorry, I refuse to wait longer than 15-20 minutes for a table. I applaud you who can do that. I can’t.
Anywho. We went on a weeknight instead. Oh, and there was this flippin’ sweet CLASSIC CAR SHOW going on. Now, this was no “formal” or “organized” car show – it was clearly a bunch of old men who have lived in Hillsborough forever getting together in this gravel parking lot showing off their freshly waxed antique cars. IT WAS AWESOME. I love old cars. A LOT.
This is just one of the many things I love about Hillsborough. Stuff like this happens all the time.

Husband’s plate of food – he got 1/2 pound of BBQ, coleslaw, and mac & cheese. His words: “It was good, not great.”
My plate: I got 1/4 pound pulled pork with potato salad and Cajun fries. Oh, and hush puppies. Now, I like the BBQ. I did NOT like the potato salad. Also, the Cajun fries were good, but quickly learned they were fried with fish – and I’m allergic to fish – so needless to say I didn’t feel well the rest of the night. š
And their BBQ sauces… Their Eastern sauce was much better than their Western sauce.
Overall? Great service! Great atmosphere! Great location! So-so BBQ – I think they really need better sauce. The sauces were just not that great. And frankly, a good sauce can make or break BBQ. Especially if you’re living in North Carolina and you’re used to GOOD Eastern-style BBQ. nawmean?
Also, I really wish I hadn’t gotten the Cajun fries – I did NOT feel well after eating those. š
Overall Stillman Grade? 2.5 out of 5 stars. We’ll go back and give it another chance, for sure.
